Deep beneath the clear waters off Con Dao, Phu Quy and Phan Thiet – famed for some of Vietnam's richest seafood – the estuary grouper is regarded as a "rough gem" of the ocean. This fish stands out not only for its robust form but also amazes diners with smooth white, firm flesh that has few bones and a natural clean sweetness.

The estuary grouper is not only a rare delicacy but also a precious food rich in essential nutrients:
